For years I chased the memory of a yellow hot sauce made by my neighbor’s Trinidadian grandmother. After a lot of trial, error, and tweaking, this is the result. Bright mango, warm jerk spices (thyme, allspice, nutmeg), and fresh lantern habaneros from Oakwoods Farm working together like a reggae band. Originally a pork/chicken marinade. It’s incredible on salmon, shrimp, veggies… pretty much anything you want to wake up.
